taco night with a twist

Wednesday night, Jas and I had taco night.  Taco night is for sure one of my fave meals.  Only this time, we decided to give it a little face lift.
We had double decker night.
Here is how it's done:
First we have the ground beef.  I brown it, drain the fat, and then sauté red peppers and onions.  Once the peppers and onions are almost done, I put the meat back in and add the taco seasoning and water.  I also warmed up some refried beans.
We set all the fixings on the table.  We like tomatoes, lettuce, cheese and my fave - avocados.  We also added sour cream and hot sauce.
mmmmm don't they look scrumptious?!
Start with a soft taco shell and spread the refried beans.
And wrap it around the hard taco shell.
Lastly add all the yummy fixings inside.  We had yellow rice on the side as well.
Jas really enjoyed our delicious dinner.  Isn't he such a cutie?!  Man, I just love his sexy dimple!

I might have to try this...we usually have tacos 2 nights a week, so this might be an idea for one night!
